Mastering Fondant Stripes: A Step-by-Step Guide

Creating stunning fondant stripes can transform your cake into a work of art, adding a touch of elegance and sophistication. Here’s my tried-and-true method for achieving perfectly aligned stripes every time!

Essential Tools: The Spacers

To create my fondant stripes, I rely on a selection of spacers, which come in various widths: 1/4”, 3/4”, 1”, 1-1/4”, and 1-1/2”. While I personally favor aluminum strips due to their longevity and reliability, you might also consider using sturdy cardboard cutouts in your preferred sizes. It’s all about experimenting with different materials to discover what suits your style and technique best!       

       

Preparing Your Canvas: The Cake

Before you begin applying your stripes, it's crucial that your cake is level and straight. A measuring tape is an invaluable tool in this process; be sure to measure both the top and bottom of the cake to ensure uniformity.       

          

 Getting Started

  1. Select Your Spacer:  Begin by choosing the spacer that corresponds to the width of the stripes you wish to create.
    2. Marking the Starting Point: Use your scraper as a straight edge to establish a level starting point. Lightly draw a faint line on one side of the spacer to serve as your guide.
    3. Cutting the Fondant Strips:  Carefully cut out your fondant stripes, taking care to keep them covered to prevent excessive drying. A slight surface dryness can actually make handling easier, so aim for a balance. Ensure that the base of each strip is flat for a seamless application.

 

            

The Application 

1.Prepare the Cake Surface: Lightly brush a small amount of water onto the area where each stripe will adhere. Be mindful of the width of your spacer to ensure even placement.
2.Placing the Stripes: Continue applying the fondant stripes around the entire cake, using the spacer to maintain consistent gaps between each stripe. This will give your cake a polished and professional appearance.

 Personal Touch: A Learning Journey

I first learned this technique under the expert guidance of Anna Maria at Planet Cake back in 2010. Each time I recreate it in my designs, I discover new ways to improve my approach. Application of this technique was during my Springtime cake project in Class 105, where we were tasked with designing and crafting a double ba rrel cake paired with a standard height 4” cake, perfect for a wedding with a spring theme as part of our assessment task.

More recently, I employed this same technique while creating my Haute Couture Wedding Cake piece for the Brisbane International Cake Show ACADA in April 2025. It was an exciting opportunity to showcase my skills and creativity on such a prominent platform.
